Here’s an idea for you! Tilapia, sweet potatoes, and mango over a bed of Romaine and other veggies. It’s quite delicious.
Here’s what I used:
- Romaine lettuce and baby spinach, torn into pieces
- Chopped red onion, red bell pepper, avocado
- Tilapia
- Cooked quinoa
- Baked sweet potato
- Black beans
- Diced ataulfo mango
- I started with Romaine lettuce and baby spinach leaves then added red onion, red bell pepper, and avocado.
- The tilapia was fried in a little bit of olive oil on medium heat to make it crispy.
- I placed the tilapia on top of the lettuce. I had some tri-color quinoa, black beans, and baked sweet potato left over from the night before. I mixed the quinoa and black beans together and also put it on the salad. I can usually find a good way to use any leftovers I have. 🙂
- For the final touch, diced mango and diced baked sweet potato were added.
I used raspberry balsamic vinegar for my dressing.
