Here’s another quick and easy dinner idea: Red quinoa salad.

Hello!  I want to share a tasty dish that we tried recently.  It’s quick, easy, and delicious!  How about trying it tonight?

I love quinoa because it’s filling, tasty, and guilt-free. For me, it’s a healthy alternative to other grains.

Your choices are white, red, black, and tri-color. I’ve tried everything but the black and like them all.

Ingredients for salad:

Prepared red quinoa (or any color you like)

Red onion

Red bell pepper

One small avocado

One can of black beans (or use red if you want to be color-coordinated)  😉

Mango  

(Also called for cilantro and corn, which I did not use.)

Ingredients for dressing:

Olive oil

Coconut oil

4-5 TBS lime juice

Minced garlic

Salt

Pepper

Cilantro (I used basil instead)

Mango juice

Cook the quinoa (I used one cup quinoa and 2 1/4 cups water for 2 of us), chop the veggies, and mango.  

I cheated and used one of those mango fruit cups.  When I use fresh, I always use the champagne mangoes if they’re in season.  

After the quinoa cools, mix all ingredients together.  Set aside.

Make the dressing

The dressing recipe called for 1/4 cup olive oil; I split the total between the 2 types of oil.  

The mango juice from the fruit cup added some tang.  (I love mango, so next time I’ll use more)

Mix all dressing ingredients together and drizzle over the salad.  Warmed up Naan goes great with this.
