Need a quick and easy dinner tonight? Try my quinoa with hamburger and black beans. It’s mouthwatering and, better yet, it only takes 4 quick and easy steps:

  1. Start the quinoa (any color).  I used 1 cup of red (for 2 people).  Follow directions on package.  Replace water with vegetable broth for more flavor (per my niece, Gentry).  🙂
  2. Brown and season some hamburger.  (I used about 1/2 pound.)  Drain if necessary.  When the quinoa is finished cooking, add it to the pan of hamburger. Add a can of black beans and some Ortega taco sauce. I used a combination of mild and medium.  Keep on the burner until it is warm clear through.  (I also threw in some halved grape tomatoes.)
  3. Chop any veggies and fruit you want on top.
  4. Place the mixture on plates and top with the chopped veggies/fruit.  Optional: add sour cream, cottage cheese, or guacamole to your finished creation.

Change it up!

This is an easy go-to idea and is versatile. Change up the quinoa color, use ground chicken instead of hamburger or try some other type of beans.

The possibilities are numerous and all delicious.

Here are the toppings we used: red onion, lettuce, red bell pepper, and champagne mangos (YUM!) The mangos add such a nice tang with the taco sauce.

My favorite type of mangos are back in season!  🙂 They are called Ataulfo or Champagne and have a much better flavor and are easier to peel and cut than the larger reddish ones.
