Need a quick and easy dinner tonight? Try my quinoa with hamburger and black beans. It’s mouthwatering and, better yet, it only takes 4 quick and easy steps:
- Start the quinoa (any color). I used 1 cup of red (for 2 people). Follow directions on package. Replace water with vegetable broth for more flavor (per my niece, Gentry). 🙂
- Brown and season some hamburger. (I used about 1/2 pound.) Drain if necessary. When the quinoa is finished cooking, add it to the pan of hamburger. Add a can of black beans and some Ortega taco sauce. I used a combination of mild and medium. Keep on the burner until it is warm clear through. (I also threw in some halved grape tomatoes.)
- Chop any veggies and fruit you want on top.
- Place the mixture on plates and top with the chopped veggies/fruit. Optional: add sour cream, cottage cheese, or guacamole to your finished creation.
Change it up!
This is an easy go-to idea and is versatile. Change up the quinoa color, use ground chicken instead of hamburger or try some other type of beans.
The possibilities are numerous and all delicious.
